Some great new vegetarian recipes!

If you’ve read any of my recent posts, you know that I’ve been trying to adopt a vegetarian lifestyle due to health issues. I LOVE the green smoothies I make for breakfast each morning – even have my hubby drinking them. 🙂 Dinners are the hardest as I’m so used to cooking meat and potatoes and veggies. Tonight I took a recipe from The Good Book Cookbook and tweaked it to our tastes (and what I had in the house). It was de-lish!

My version:

Quinoa Lentil Stew

1/3 cup (or thereabout) of chopped or grated onion (I used one small) 1/2 cup chopped celery 1/2 cup chopped carrots 3 T butter 5 cups chicken broth (I didn’t have vegetable broth in the house) 1 cup dried lentils, picked over and washed 1/2 quinoa (the original calls for barley but I didn’t have any) 1/8 tsp rosemary 1 tsp ground cumin 1/2 pound (or whatever you’re comfortable with) spinach 1 sweet potato cut up

The recipe called for sautéing the vegetables in the butter (which I cut from the original 5 T) but I just tossed everything in the crock pot and cooked it on high for about five hours. It was SO good. A definite keeper!

Another favorite nighttime snack I found in the Practically Raw cookbook by Amber Shea Crawley.

Chocolate Covered Strawberry Smoothie 1 frozen banana 1 1/2 cups chocolate Almond milk (It calls for regular or homemade but I had chocolate in the house.) 1 1/2 fresh strawberries and raspberries (frozen can be used) 2 tablespoons of raw cacao powder 1 tsp. vanilla 2 pitted dates

Put it all in a blender until it liquifies. Yum!!!

I use organic products when possible. Sometimes that’s not possible, but where I can find it and afford it, I do so. I must tell you that drinking green smoothies for breakfast has lifted my mood way better than I could have imagined. What are they putting in our processed foods that is adding weight to our bodies and sadness to our emotions? I’m amazed at the difference, truly! It helps with my focus and even with all of the changes in my life right now, I’m happy and much more able to cling to Jesus every step of the way.

By the way, I mix up my green smoothies with all sorts of things. Here is a typical breakfast: (Mostly organic)

A handful of baby kale Two handfuls of spinach Hemp seeds A few pieces of broccoli A handful of baby carrots Green Superfood powder Berries and/or grapes and cherries and peaches and figs – take your pick of several Almond or coconut milk or sometimes I use watermelon juice or a bottled organic green Kombucha or other type of juice.

There is no end to the things you can add to a smoothie. Sometimes I add sprouts too or coconut sugar if the milk is unsweetened. Breakfast has become my favorite meal – so little work and so good for you! And it tastes great too.

I may not cure my health issues with diet, but I certainly can’t hurt them. It gets a little tricky to avoid soy, gluten, non GMO grains and eat as raw as possible, but I’m learning…slowly!
